Actually, that's something we do with quite a few of out gluten-free desserts to save time: bake once, freeze, then thaw and eat on many occasions. I appreciate the fabulous review too, and I'll be sure to link to it and/or quote it. I never had any one tell me the cakes we bake were too large (typically, we get requests for more vs. less). But, I can understand if the cake is baked and only serving a few people. We tend to take our cakes and desserts to parties where we have quite a few consumers.
