{"id":254,"date":"2007-08-01T20:38:07","date_gmt":"2007-08-01T19:38:07","guid":{"rendered":"http:\/\/www.free-from.com\/blog\/?p=254"},"modified":"2017-05-20T12:24:10","modified_gmt":"2017-05-20T11:24:10","slug":"gluten-free-quick-easy-first-impressions","status":"publish","type":"post","link":"https:\/\/www.free-from.com\/blog\/gluten-free-quick-easy-first-impressions\/","title":{"rendered":"Gluten Free Quick &#038; Easy: first impressions"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.free-from.com\/blog\/wp-content\/uploads\/2007\/07\/Gluten-Free-Cover-1.jpg\" alt=\"\" width=\"241\" height=\"300\" class=\"alignright size-full wp-image-3834\" srcset=\"https:\/\/www.free-from.com\/blog\/wp-content\/uploads\/2007\/07\/Gluten-Free-Cover-1.jpg 241w, https:\/\/www.free-from.com\/blog\/wp-content\/uploads\/2007\/07\/Gluten-Free-Cover-1-80x100.jpg 80w\" sizes=\"auto, (max-width: 241px) 100vw, 241px\" \/>As you probably know by now, Carol Fenster has a new book out (2 Aug 07) called <a href=\"http:\/\/www.amazon.com\/gp\/redirect.html?ie=UTF8&#038;location=http%3A%2F%2Fwww.amazon.com%2FGluten-Free-Quick-Easy-Without-Sensitivities%2Fdp%2F1583332782%3Fie%3DUTF8%26s%3Dbooks%26qid%3D1185189158%26sr%3D8-2&#038;tag=frfrbl-20&#038;linkCode=ur2&#038;camp=1789&#038;creative=9325\">Gluten Free Quick and Easy<\/a><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=frfrbl-20&amp;l=ur2&amp;o=1\" width=\"1\" height=\"1\" border=\"0\" alt=\"\" style=\"border:none !important; margin:0px !important;\" \/> (aff).  <\/p>\n<p>A <a href=\"http:\/\/leaisglutenfree.blogspot.com\/2007\/07\/gluten-free-quick-easy.html\">number<\/a> of <a href=\"http:\/\/gf-gastrognome.blogspot.com\/2007\/07\/gluten-free-quick-and-easy.html\">bloggers<\/a> have been <a href=\"http:\/\/myglutenfreecookbook.blogspot.com\/2007\/07\/recipe-and-review-gluten-free-quick.html\">commenting<\/a> on it already, and I thought I&#8217;d give you my first impressions.  I have been trying out some of the recipes, and I&#8217;ll comment on these in my next post.<\/p>\n<p>My first impressions of this book are good, though I do like to see photos of the finished item &#8211; there are no photos at all in this book other than those on the cover.  <\/p>\n<p>I really like the way Carol uses language carefully to describe her gluten free lifestyle &#8230; she says she refers to her diet as &#8216;tailored&#8217; or &#8216;customised&#8217;, rather than &#8216;restricted&#8217; or &#8216;limited&#8217;.  We&#8217;ve always talked to my daughter about her &#8216;special&#8217; tummy, rather than apply negative words to the situation, so I&#8217;m going to try to use this terminology myself to talk about the diet in future.<\/p>\n<p>I also like her suggested system of &#8216;planned-overs&#8217;, where you prepare extra and freeze it for future use (see? careful use of language again &#8230;).  Yes, I expect experienced cooks do this a lot.  I always seem to end up with &#8216;leftovers&#8217; &#8211; tiny portions of this and that which don&#8217;t really fit into any future meal other than (occasionally) soup, and that&#8217;s because I haven&#8217;t planned it in advance.<\/p>\n<p>There are also some invaluable tips for making herb and spice blends (so that&#8217;s Christmas sorted), and tips scattered throughout the book.  Carol clearly spends a lot of time in her kitchen, and is very knowledgeable.<\/p>\n<p>And, at the beginning, there is a section full of sensible information for people new to the gluten free life on how to get started &#8211; and at the end, a section on useful websites and resources, and where to find gluten free ingredients and products, though these are all based in America.  Perhaps, since the book is available at <a href=\"http:\/\/www.amazon.co.uk\/gp\/redirect.html?ie=UTF8&#038;location=http%3A%2F%2Fwww.amazon.co.uk%2FGluten-free-Quick-Easy-Without-Insensitivies%2Fdp%2F1583332782%3Fie%3DUTF8%26s%3Dbooks%26qid%3D1185996956%26sr%3D8-6&#038;tag=weblucent-21&#038;linkCode=ur2&#038;camp=1634&#038;creative=6738\">www.amazon.co.uk<\/a><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.assoc-amazon.co.uk\/e\/ir?t=weblucent-21&amp;l=ur2&amp;o=2\" width=\"1\" height=\"1\" border=\"0\" alt=\"\" style=\"border:none !important; margin:0px !important;\" \/>(aff), there should be a UK version?<\/p>\n<p>Carol&#8217;s system for baking uses a basic blend of flours, to which are added different things for different purposes.  So, she has a basic Flour Blend, and adds other items to get a yeast bread mix, or a cookie mix, or a cake mix, or a muffin mix, or a pancake mix &#8230; This is an entirely new way of collating ingredients for me, and I would have appreciated having all the mix recipes in one place in the book for ease of reference (as well as where they are currently located) &#8211; just a suggestion for when this book gets republished, as I expect it will.<\/p>\n<p>Now, creating the Flour Blend itself proved to be a bit of a challenge, as sorghum flour isn&#8217;t readily available here in the UK &#8211; or at least, I struggled to find any.  I eventually tracked some down at the <a href=\"http:\/\/www.theasiancookshop.co.uk\">Asian Cookshop<\/a>, which has a wide range of flours, but not tapioca flour or potato starch, which I found at <a href=\"http:\/\/www.dietaryneedsdirect.co.uk\">Dietary Needs Direct<\/a>, which has an extraordinary range of flours &#8211; but not sorghum.<\/p>\n<p>I&#8217;m sure that once you got the hang of creating the mixes, this system would get quicker and easier.
