{"id":50,"date":"2006-10-03T15:15:49","date_gmt":"2006-10-03T14:15:49","guid":{"rendered":"http:\/\/www.free-from.com\/blog\/?p=50"},"modified":"2006-10-04T12:42:29","modified_gmt":"2006-10-04T11:42:29","slug":"gluten-free-honey-ginger-cake","status":"publish","type":"post","link":"https:\/\/www.free-from.com\/blog\/gluten-free-honey-ginger-cake\/","title":{"rendered":"Gluten Free Honey &#038; Ginger Cake"},"content":{"rendered":"<p>This cake worked well for us, and my daughter ate most of it &#8211; a rare event, because she isn&#8217;t really into cakes.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>3 oz runny honey<br \/>\n8 oz gluten free flour<br \/>\n1 tsp baking powder<br \/>\n1 tsp each of ground ginger and cinnamon<br \/>\n1\/4 tsp of ground cloves<br \/>\n3 oz of sugar<br \/>\nzest of 1 small orange and 1 lemon<br \/>\n4 oz butter<br \/>\n1 egg<br \/>\n1 tsp bicarb of soda<br \/>\n2 oz chopped stem ginger<\/p>\n<p>For icing: 6 oz icing sugar (confectioners sugar) and 1 tblsp lemon juice<\/p>\n<p>Preheat the oven to 170C.<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Sift the flour, baking powder and spices into a large bowl and add the sugar and zest.  Rub the butter in.  <\/p>\n<p>Warm the honey slightly, and beat it with the egg.  Mix into the flour mixture.<\/p>\n<p>Mix the bicarb with 3 tblsps of water until dissolved, then beat into the flour mixture.<\/p>\n<p>Stir in the chopped ginger and tip the mix into a greased or lined 8&#8243; round tin.<\/p>\n<p>Cook for about 50 minutes.  Cool it in the tin for about 10 minutes then turn it onto a cooling rack until cold.<\/p>\n<p>Then sift the icing sugar into a bowl, add the lemon juice and about 2 tblsps of water to get a thin icing &#8211; pour it over the cake.  Do put a plate under the cake because this is very runny icing!<\/p>\n<p>If you like, you could put more chopped stem ginger on the top to decorate it.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This cake worked well for us, and my daughter ate most of it &#8211; a rare event, because she isn&#8217;t really into cakes.
